As I am about to write this article about one of the best gluten free luxury hotel in Bangkok, I ask myself: What makes a place be special?

Let’s be honest, luxury hotels can be quite similar in their offerings: grandiose lobbies, marble bathtubs, infinity pools and sophisticated food are always amazing, but they’re not what really shapes the soul of a place.

Only people can do that. And that’s why this story about my gluten free journey at the Grand Hyatt Erawan in Bangkok won’t really be as much about healthy food and travel, but about people.

Only people have the power to imbue a place with that honest feeling of being part of a family, a sensation one should always have when checking into a hotel they’ll get to call home, even if just for a handful of days.

I arrive at the Grand Hyatt Erawan late in the afternoon, and as a Hyatt loyalty program member, I get to check in right on the 17th floor, where the executive club lounge is located.

They just started to serve the complimentary evening cocktails, and while my bags are being brought into my room, I ramble around the tables peeking into the different bowls and platters of refreshments.

A nice Thai lady appears from behind: “Welcome Miss Ambra! My name is Gai and I prepared these tickets for you” she says handing me little pieces of paper with fancy Thai inscriptions. They say “I am intolerant to gluten, dairy and nightshades”.

I have traveled a lot, but this is a really next level and I already know I’ll soon fall in love with this amazing gluten free luxury hotel located in the true heart of Bangkok.

Wait, how did you know?” I ask her, pleasantly surprised. It must have been Tata, I think, the restaurant manager of the Hyatt Regency Phuket where I just came from. I have been three times (see my reviews here and here) in the last 4 years and he still keeps a list of my food intolerances saved on his phone.

Gai, the Club Lounge assistant manager, smiles and confirms. Then she gently puts a hand on my shoulder and with almost maternal care she guides me through the various food options I have available, together with one of the chefs who she double checks the ingredients with.

I sit at my table with a plate full of rainbow veggies, squid salad, hummus and avocado and, as I place the table cloth on my laps, Gai arrives with a plate in her hands: “This is some warm gluten free bread from our French pastry chef”.

I still haven’t seen my room and I already wish I could move in.

Remy Janicot is one of those chefs you want to be baking your bread. Before he took off to work in some of the most exclusive resorts in South East Asia, he built his career in various Michelin starred restaurants in France, from l’Auberge de l’Ill to Le Buerehiesel.

He shows up at my table on a Sunday morning, with an earnest smile and a plate of freshly baked poppy seed gluten free muffins.

These are for you Madame! No dairy, no gluten and very little sugar”, he tells me with a friendly voice made rhythmical by his charming French accent.

I push my plate of vibrant Thai papaya on the side and grab one of the petite dome shaped pastries he hands me.

Airy like a cloud, weightless, and with a perfectly subtle sweet note I hate sugary treats. I wonder if he knew that. Maybe he glimpsed at my website?

Since the day I checked in, I never even made it to dinner because the Hyatt members’ cocktail here is so good and abundant.

And now I even have my own custom dessert? It’s Songkran week, one of the biggest holidays of the year here in Thailand, and I can’t even imagine how busy they must be.

Grand Hyatt private opening ceremony of Songkran, the Thai Lunar New Year. 100 people wearing Hawaiian style shirts hold pretty silver cups filled with water and jasmine blossoms, which they pour over a golden Buddha statue. “This fresh water is a symbol of our New Year’s blessings. – Khemwanta Tangon, the Marketing Communications Manager, tells me  –. It represents a new beginning, and symbolically it washes off all the negative things we want to leave in the past”.

Right after the official part of the ceremony is over, the same people who were silently praying in front of Buddha, go absolutely nuts, and what started as a religious water ceremony turns into an exhilarating water war, with people running around holding colorful water guns!

Everybody, from the servers to the hotel executives are laughing and playing; splashing water on each other while sharing traditional Thai specialties.

Even Savinol is there, standing behind the beautifully presented buffet table. She is the sous chef at Erawan Tea Room, who the night before was able to prepare an incredible Thai food feast for me and my husband while keeping the food on the healthy side and avoiding gluten and dairy. (And did I mention they can create a custom gluten free high tea too?!)

Some of the amazing flavors as well as the impeccable and classy interiors, from the spa to the grandiose lobby and our incredible room, I will definitely take away with me, but it really is the people I experienced them through that made them memorable.

And there isn’t a mango sticky rice that will ever taste sweeter than the one Gai brought to me on my last day at the Hyatt: heart shaped pieces of mango that came with the caption: “With all our heart, the Grand Hyatt Erawan family”.
