From a health stand point, traveling is as much fun as it is challenging. Many times, staying in hotels or resorts sends us home with lots of beautiful memories… but with a few additional pounds as well!
You never stop learning in the food world. There are always new healthy ingredients to discover, new flavors to cook with, new textures to add a kick to your dishes.
You know I am a nomad. I am always on the move and I think meeting different cultures is the most exciting thing in the world.
As much as this experience can be fun and enriching, it can also be upsetting and disruptive to a healthy diet… so much that, at the end of the trip, you feel like all you want is stay at home, make salads and drink green juice.
One of the questions I receive most often is: “How do you eat healthy while traveling so much?”
I feel you, many times traveling equals overeating, dining out all the time, not working out and gaining weight.
In the north of Italy where I am from, stuffed capon (a castrated rooster) is one of the most traditional dishes for Christmas Day… but, since I know the rest of the world likes to stuff a bird for Thanksgiving, here is my recipe for a festive AIP Stuffed Capon!!
