From amazing “Schiacciata” (a flatbread drizzled with olive oil and sea salt crystals) to “Caciucco” (tomato & fish soup); from “Cantucci” (which I remade gluten free for you) and “Brigidini” (anise flavored sweet chips) to their delicious stews and infamous the “Pici” (thick, homemade spaghetti).

Coming Back Home to Hyatt Regency Phuket

Being greeted by familiar faces of the head manager Ruben Schrijver, chef Alessandro and several other staff members made us feel right at home, and we quickly fell back into our routine: breakfast at the Pool House, gym, mid day nap, afternoons by the pool (with a coconut to keep cool), sunsets at the Club and nights back at the pool, listening to one of the most soothing DJ’s ever and enjoying one of their eclectic nightly buffets.
